I am not a "from scratch" girl... Actually I am pretty domestically challenged. But since we have moved to a place that doesn't have many seasoning packet or boxed meal options, I have seriously improved my culinary skills. What really surprised me is that tonight I made my first homemade chili without a chili seasoning packet and without canned tomatoes... And it was the best chili we have ever had!

 

 

3 medium onions diced

1 bell pepper diced

1 green chili pepper diced

2 TBSP olive oil

2 pounds ground beef

3 TBSP cumin

2 tsp chili powder

4 large cloves fresh garlic (pressed)

2 tsp salt

1 TBSP Texjoy steak seasoning (or your favorite steak seasoning, may need to adjust amount though... but I am very partial to Texjoy. We brought 6 - 32 oz containers of it with us!)

1 kilo of small tomatoes diced

1/4 cup diced celery

2 cans of chili beans

2 cups small tomatoes diced

shredded cheese (optional)

Started with sautéing three medium onions, one bell pepper, and one green chili pepper in olive oil. Then added two pounds ground meat. Browned the meat and added three TBSP cumin, 2 tsp chili powder, four large cloves fresh garlic (pressed), 2 tsp salt, 1 TBSP Texjoy steak seasoning. Stirred and cooked for 2 minutes then added 1 kilo of small tomatoes diced and about 1/4 cup diced celery. Boiled until the tomatoes were completely cooked into a sauce... About twenty minutes. Then added two cans of chili beans. Cooked for ten minutes. Added two cups small tomatoes diced and cooked for three minutes... Just enough to heat the fresh tomatoes. Then served with freshly shredded cheese on top... YUM!
